Authentically Austrian
Upper Austrian Renate Dengg and Salzburg native Max Setrak have made a name for themselves in the restaurant industry with their establishment.
From mid-November onwards, Jolesch traditionally serves Christmas goose every year. For those who want to enjoy this delicacy at home, the restaurant delivers crispy pre-cooked goose with accompanying side dishes such as red cabbage, kale, potato dumplings and dessert directly to homes throughout Germany. A vegan option is also available.
Another highlight of Jolesch can be found in the wine cellar: it is filled to the brim with an exquisite selection of the finest Austrian wines.
Head chef Tobias Janzen
Head chef Tobias Janzen has been maintaining standards at Jolesch for 10 years. He previously earned 15 Gault Millau points at Sankt Moritz in Berlin and enjoys an excellent reputation in the gastronomic scene as an ambitious and technically skilled culinary professional.
Like no other chef, Tobias Janzen combines the hearty and refined flavors of Austrian cuisine. He skillfully plays with tradition and modernity. He has mastered classics such as juicy boiled beef and Carinthian cheese noodles as well as tender scallops with crispy sesame granola.
At Christmas, Tobias Janzen wraps confit Martinigans in Asian dumplings, adds beetroot to dumplings with mountain cheese, and offers gluten-free, vegetarian, and vegan versions of Wiener schnitzel. Extensive wine list with rarities from the Alpine region. Highlight: Cordon bleu filled with Vulcano ham from a family-run manufacturer and Vorarlberg Räss cheese.
The wine list, which only includes Austrian wines, is record-breaking for Berlin in terms of size and affordability. Pages and pages of Veltliner, Riesling, Morillon, Zweigelt, and Blaufränkisch from well-known and lesser-known winemakers between €20 and €50, plus many good wines by the glass, which can be offered as well-matched wine accompaniments on request.
The kitchen style
Aromatic, hearty and meaty Frittaten soup with vegetables can be found at Jolesch, as can well-known Austrian desserts such as Kaiserschmarrn with stewed plums.
For the main course, a classic boiled beef dish is served with a little broth, creamy chive sauce and crispy fried potatoes. Lightly whipped creamed spinach with a strong nutmeg flavour is served on the side.
One of the classics of Austrian cuisine, the Wiener Schnitzel, stands out thanks to its buttery flavour and thin, but not too thin, tenderised meat.
The kitchen team also ventures into very modern interpretations of Alpine cuisine with its seasonal specialities. Confit goose leg is served not only with gyoza and fried chanterelles, but also with a jus refined with matcha powder. An unusual combination, but one that gives the dish a welcome tart note.
On a diet? That’s difficult at Jolesch, because the desserts and pastries are too good. The Kaiserschmarrn with stewed plums is a must-try and is also available gluten-free. But so are the fruity-sweet Wachau apricot knödel with breadcrust butter.
Joesch’s wine list comprises a total of 300 options: from classic to modern notes from all of Austria’s wine-growing regions. Fruit brandies, gins and port wines can also be found on the menu.
Warm & cosy atmosphere
Historic wooden doors, herringbone oak parquet flooring and dark green walls characterise the interior of Jolesch, bathed in the light of magnificent chandeliers. A large-format copy of the painting ‘The Wave’ by Ivan Konstantinovich Aivazovsky dominates the room.
Jolesch is a great choice for dinner or a glass of wine in the evening. In summer, guests can sit at tables under the shady vine canopy, while in the colder months, the fireplace in the entrance area spreads a pleasant warmth. Those who would like to visit with the whole family or the office team can sit almost privately in the wine bar, which can accommodate up to 20 people.
At Jolesch, guests can enjoy private dinner parties in the wine bar, wine cellar or vault room. The latter, with its gleaming historic safe, can accommodate up to 14 guests. Romantics can find an intimate table by the window, and those who like to socialize can simply sit in the middle of this wonderfully spacious and inviting dining room. At Jolesch, the hosts know what their guests are looking for. And they offer each of them exactly that—completely uncomplicated, but warm and professional.
